Rocket Fuel Latte
PREP TIME. 5 minutes
MAKES. One 16-ounce (475-ml) serving or two 8-ounce (240-ml) servings
NOTES. Egg-free. Low-fodmap. Nightshade-free. Nut-free. Vegan option included.
This creamy latte is an upgrade on the classic keto butter coffee, without the butter. And it has a hint of white chocolate flavor! This beverage is designed to specifically assist women with burning fat all morning long while regulating hormones and abolishing cravings. If you choose to enjoy your RFL in the morning, on its own, you'll continue your fast. If you enjoy eating breakfast, you could split your RFL into two servings, saving the other half for the next morning, and enjoy it alongside your favorite keto-friendly breakfast like bacon, eggs, and greens! If you don't have a high-powered blender to pulverize those hulled hemp seeds, substitute your favorite low-carb nut or seed butter.
Ingredients
1¾ cups (415 ml) hot brewed coffee (regular or decaf) or tea
1 tablespoon MCT oil or coconut oil
1 tablespoon cacao butter
1 tablespoon hulled hemp seeds
2 to 4 drops liquid stevia (optional)
¼ teaspoon vanilla extract or powder
Pinch of finely ground Himalayan rock
salt (optional)
1 tablespoon collagen peptides or protein powder or 1½ teaspoons unflavored gelatin
Pinch of ground cinnamon, for garnish
Directions
Place the hot coffee, oil, cacao butter, hemp seeds, stevia (if using), vanilla, and salt in a high-powered blender (see note above). Blend on high speed for 1 minute, or until the hemp seeds are pulverized.
During the last 10 seconds, add the collagen and continue to blend.
Transfer to a mug, sprinkle with cinnamon, and enjoy.
Tips
STORE IT. Keep in an airtight container in the fridge for up to 3 days.
REHEAT IT. Pour the RFL into a saucepan and place over medium heat, stirring often, until it comes to a light simmer. Or you can use the microwave, heating until the desired temperature is reached.
PREP AHEAD. Brew the coffee or tea, let it cool, and store it in the fridge for up to 3 days. When ready to prepare the RFL, reheat the coffee or tea on the stovetop or in the microwave, then follow the instructions above.
MAKE IT VEGAN. Replace the collagen with an additional 2 tablespoons of hulled hemp seeds.
Variations
HOT CACAO. Combine 1¾ cups (415 ml} of hot brewed coffee or tea (peppermint tea is awesome in this version!), 1 tablespoon of cacao butter, 1 tablespoon of MCT oil or coconut oil, 1 tablespoon of chia seeds, 1 tablespoon of cacao powder, 2 to 4 drops of liquid stevia (optional), a pinch of finely ground Himalayan rock salt (optional), and 1 tablespoon of collagen peptides or protein powder or 1 ½ teaspoons of unflavored gelatin.
COCONUT PARTY. Combine 1¾ cups (415 ml) of hot brewed coffee or tea, 1 tablespoon of coconut oil, 1 tablespoon of MCT oil, 1 tablespoon of melted coconut butter, ¼ teaspoon of vanilla extract or powder, 2 to 4 drops of liquid stevia (optional), a pinch of finely ground Himalayan rock salt (optional), and 1 tablespoon of collagen peptides or protein powder or 1 ½ teaspoons of unflavored gelatin.
GREEN TEA LATTE. Combine 1¾ cups (415 ml) of hot water, 2 tablespoons of coconut oil, 2 tablespoons of full-fat coconut milk, 2 teaspoons of matcha powder, 2 to 4 drops of liquid stevia (optional), and 1 tablespoon of collagen peptides or protein powder or 1 ½ teaspoons of unflavored gelatin.
EGGNOG. Combine 1¾ cups (415 ml) of hot brewed coffee or tea, 2 tablespoons of full-fat coconut milk, 1 tablespoon of MCT oil, ½ teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, 2 to 4 drops of liquid stevia (optional), and 1 tablespoon of collagen peptides or protein powder or 1 ½ teaspoons of unflavored gelatin.
AYURVEDIC. Combine 1¾ cups (415 ml) of hot brewed coffee or tea, 1 tablespoon of coconut oil, 1 tablespoon of MCT oil, 1 tablespoon of tahini, ½ teaspoon of turmeric powder, ¼ teaspoon of ground cardamom, ¼ teaspoon of ginger powder, 2 to 4 drops of liquid stevia (optional), a pinch of finely ground Himalayan rock salt (optional), and 1 tablespoon of collagen peptides or protein powder or 1 ½ teaspoons of unflavored gelatin.
